WALD? "Wald" means forest, like the one outside our door, which offers us more than we can possibly know. WERK? "Werk" refers to craft, like pottering, tinkering and inventing creative dishes with passion. For us, cooking means creating an experience for you. It is an engagement with the product, the origins and the farmer or producer – most of whom we know by name.

At WALDWERK, we know the origin of every carefully selected product from southern Lower Saxony and the Harz Mountains. We regularly visit our producers to learn how they work and build relationships with them. We get game from the Hardenberg forests from professional hunter Florian Saltenberger and we get our beef from grass-fed cattle in Mandelbeck. The best part: an animal is only slaughtered when all the components have found a buyer – which means our availability can vary from day to day. 

Our menu is regularly supplemented with new, unusual creations!

Easter brunch in the middle of nature

Easter is just around the corner! Appropriately, there's your extensive Easter brunch for the whole family with us!

Easter Sunday in the morining

Varied late riser breakfast until 14.00 p.m for our house guests and "not-sleeping-at-us" with warm dishes for Easter brunch from 12.00 o'clock. Look forward to asparagus salad with vegetable vinaigrette, wild garlic foam soup, braised leg of lamb, char with herb crust, potato gratin, Northeim weekly market vegetables, spinach ricotta ravioli and Rübli cake with sour cream.

Easter Sunday in the evening

Elaborate á la carte dishes & a special Easter menu from 18.00 to 21.30 p.m.
